Beef Heart Chili

This is an easy way to work offal into your diet. If you grind the heart and mix it with some regular ground beef, it cooks up beautifully, and tastes like a particularly rich hamburger. People who don't realize there is heart in it will never even know!


  • 1 beef heart
  • 1 lb ground beef 85% lean
  • 1 large onion
  • 6 garlic cloves
  • 2 14.5 ounce cans Muir Glen Fire Roasted diced tomatoes
  • 1 4 ounce can chopped green chilis
  • 1 3.5 ounce can chipotle peppers in adobo sauce, chopped
  • 1 cup beef stock
  • 3 tbsp cumin
  • 5 tbsp chili powder
  • 2 tsp salt
  • 2 tbsp olive oil


  1. Drain and rinse the beef heart, and cut it into large chunks. Grind the pieces a little at a time in a food processor, using the pulse function. You want it to be about like ground beef, but not liquified.
  2. Chop the onion coarsely, and fry it in the oil until it begins to caramelize. Push the onions aside, and begin working the ground beef in, browning it. Add in the heart, and cook until it all begins to come together and start to brown.
  3. Chop the garlic, and add it in. Add in the remaining ingredients. Stir well.
  4. Let this all cook on low for about twenty minutes.
