This is a simple, tasty mushroom dish, goes beautifully with fish or a steak. You can substitute any other mushrooms you can obtain.


  • 6 ounces oyster mushrooms
  • 4 ounces enoki mushrooms
  • 4 ounces shiitake mushrooms
  • 1 small onion
  • 1 T butter
  • 1 cup chicken stock
  • 1/2 cup white wine
  • 1/2 t salt


  1. Chop the onion, and slice the mushrooms coarsely. Feel free to substitute any mushrooms you can find and prefer, but keep the shiitakes and other mushrooms separately since they take longer to cook.
  2. Heat the butter in a large frying pan, and saute the onions until they begin to caramelize. Add the shiitakes and tougher mushrooms, and stir to coat with the butter. When the mixture begins to look too dry, add the wine and stock, and bring back to a boil.
  3. Add the remaining mushrooms, and the salt. Allow everything to cook until the mushrooms seem done. Move the mass of mushrooms to the side to let the liquid continue to reduce to less than half. Stir and serve.
